Creamy chicken soup...winter warmers

It's slowly getting colder here and so I was very excited to receive a parcel from my mum with a pair of socks she had knitted for me.  Her socks are simply the best and keep me nice and warm - I am sure it's because of the love she knits into them :-)  They will come in handy on the long dog walks and for snuggling up on the sofa.

Just as warm and comforting is the dish I cooked for lunch today: creamy chicken soup with rice.  This is so easy to make, doesn't cost the earth and is filling and comforting.  And using a couple of shortcuts makes this a very quick meal to put together - what more does one need on a cold or rainy day?

Come rain or shine...Mexican corn soup

We've had rain.  Not a lot but after three weeks of heat, it is very welcome in the garden.  Keith the dog is also a bit happier as he's not been too thrilled with all this warm weather...imagine wearing a fur coat all summer and you know why.

Summer might be a strange time to eat soup but when I found this recipe I figured that if they can eat soup in Mexico, then I'll manage here. And boy, did I manage :-)

This Mexican sweet corn soup is packed full of flavour and piles of vegetables and is creamy but low in fat.  Perfect!  I must admit that when I first saw the list of ingredients I wasn't sure because celery and fennel are not my favourites.  I tried it anyway and I'm glad I did.  The fennel and celery are not overpowering at all - just a hint of it in the background.  And the soup is quick to whiz up - ideal for lunch or a light dinner.

Of snow and spice...and all things nice

I met this gentleman on the right during this morning's dog walk- he did make me smile, looking all official with his tie.  Someone obviously had a lot of fun there...I really enjoy walking in the snow when it's for pleasure and Keith the dog was also very happy that it hadn't melted - he loves chasing snowballs.

With it still being so wintery here, I feel another soup recipe is in order - and this is one comes with a twist.  It brings the humble potato to life with a hint of curry and coconut milk.  You can even use leftover mash for this recipe to make it an extra speedy lunch.  The addition of crunchy vegetables gives the dish extra texture and the spice is lovely and warming on a winter's day...although this can be enjoyed at any time of the year.   It could also easily be adapted by adding thin strips of cooked chicken or cooked king prawns at the end of cooking if you don't want it to be vegetarian.

Souper Trouper

I found a few mushrooms and a rather sad looking bunch of celery at the back of the fridge and what better thing to do than to turn these into some soup for lunch? Just a handful of ingredients made a really satisfying meal.

Food waste is a big problem and by whizzing up some soup, you can breath new life into those leftover bits of veg that could otherwise so easily end up being thrown away. Definitely a feel-good meal on many levels!

Tasty...

Rainy weather is actually quite useful...I've been getting lots done indoors including all the chores!  And I have prepared a bit of food as well.. some.photos below...

I love trying new recipes and these were all previously untested - I have made houmous before but this was by far the best recipe.  Served with toasted pitta bread and vegetable crudites will make a good lunch and I can't wait to tuck in :-)  

Tomorrow morning I will make a small batch of scones to have with homemade strawberry jam...I'd better do some more running soon, given all this food around!  For that I would quite like for the weather to improve a little - I don't mind running in the rain every once in a while but when it is too often, it gets a bit tedious.
