Of muddy paws and comfort food...or Shortcut to Supper - Part II

It's the weekend!  There will be a few chores to catch up on but we'll also make time for some fun stuff like taking Keith the dog out for a long walk...preferably on the beach, since the park is still very muddy and he loves doing his "wallowing hippo" impression a little too much for our liking...

Burger Baguettes...
So, once we've cleaned the sand off the dog and done all the other bits and pieces around the house, we will probably fancy something quick and comforting for dinner.  Now, you know I am all about easy food most of the time and it strikes me that this could be a time for burger baguettes.  Another family-friendly favourite, I know these from living in Germany but haven't come across them anywhere else since.  You may already know these and are an old hand at preparing these but if not, then I urge you to try...they are fast and quite yummy indeed.

Burger Baguettes (serves 3, maybe 4)

1 pack "bake at home" baguettes (usually 2 in a pack, 200g in total)
400g mince beef (any other mince will also work although I haven't tried vegetarian mince with this)
1 medium onion, cut into small pieces
1 egg
salt & pepper
a few gherkins, sliced
tomato ketchup
a few slices of cheese (enough to cover each piece of baguette)

I made these recently - here's a picture guide...
  1. Preheat the oven to 220C (conventional oven) / 180C (fan oven).
  2. In a bowl, combine the raw mince with the egg, onion, salt and pepper and breadcrumbs to form the burger "mix".
  3. Cut the baguettes in half and slice horizontally.
  4. Divide the burger mix evenly onto each piece of baguette, top with gherkins, then ketchup and finish off with cheese.
  5. Pop the burger baguettes in the hot oven and bake for 15 minutes.  
The meat will cook, the bread will crisp up & the cheese will melt...and I hope you will smile...YUM!
