Dreaming of summer...

What a stunning morning it is!  Cold but sunny with blue skies - just perfect for walking the dog.  Before I went out, we had a lovely breakfast smoothie I whipped up for us in the blender - banana, mango, pineapple (frozen leftovers), plain yogurt, milk, a dash of apple juice and topped off with some cinnamon.  De-li-cious!  I didn't fancy a "proper" breakfast first thing but knew I needed something before the walk, so this was perfect.  I often freeze leftover fruit in small batches to use up in smoothies - it also means I don't have to add any ice to the drink which is great, especially in summer.

Lamb & Feta Burgers...

Last night I tried out another new recipe I had found: lamb & feta burgers.  Oh, they were good!  I changed the original recipe a little and we had them with homemade potato wedges on a little piece of focaccia bread.  I can definitely recommend these as a nice change from beef burgers (although I dare say these would work equally well with minced beef, poultry and possibly even with vegetarian mince, although I have not tried this).  On the BBQ these should be lovely.

Lamb & Feta Burgers

Ingredients:
400g minced lamb
100g feta cheese, crumbled
1 small red onion, chopped
1 egg
2 tbsp bread crumbs
salt & pepper

small handful chopped coriander (or parsley)

To serve:
burger buns (or crusty bread rolls, toasted focaccia bread,...)
lettuce
tzatziki (my version:  combine a small tub of plain yogurt with some grated cucumber, 1 crushed clove of garlic, salt, pepper and some chopped coriander, mint or parsley)
potato chips or wedges

Method:
  1. In a bowl, combine all the ingredients and form 4 - 6 burgers.
  2. Grill or griddle for 4-5 minutes per side, the serve on top of burger buns with lettuce and tzatziki.
We had these on top of homemade focaccia bread (lightly toasted) with salad and potato wedges and a good dollop of tzatziki (or our version of it) on the side.  Very yummy indeed!

These can be frozen - simply defrost overnight in the fridge and cook as per the above instructions.

  1. Oh that all looks good. That smoothie sounds like it would make a fabulous breakfast or would hit the spot right now for dessert. :)

    1. It really is great for breakfast and I think it might also be nice with a spoonful of peanut butter to add some more protein. Yummy! Kirsten x
